But it's now a new week and everything is back in gear! So here is the recipe for the Dark Chocolate Pannacotta with Caramelised Banana...I decided to do something with chocolate and banana as I know Nilam loves that combination...this is super rich...and I mean extremely creamy melt in the mouth lovely...a rich ganache more than a pannacotta...but who is complaining!
Dark Chocolate Pannacotta with Caramelised Banana
3 cups Cream
3 cups Cream
3 1/2 tsp Gelatin
6 tbs Powdered Sugar
250 grams Good Quality Dark Chocolate chopped in pieces
3 tbsp Cocoa powder
1 thinly sliced Banana tossed in 1 tsp sugar
Measure 3/4 cup cream in a liquid measuring cup. Sprinkle gelatin over cream and let stand at least 5 minutes or until ready to use to soften gelatin. Mix sugar and cocoa powder in medium sauce pan. Whisk in remaining cups of cream and place sauce pan over medium heat. Heat to a simmer. Remove from heat and whisk in chocolate pieces until smooth.
Add gelatin mixture. Heat and whisk constantly until gelatin is completely dissolved (do not heat to a simmer). Pour into individual bowls. Refrigerate for about 3 hours or until set.
Put the banana slices on to a baking dish and heat in the oven until the banana starts to caramelise. Once these cool place them on the individual servings of pannacotta and top off with whipped cream and enjoy!

Maria - It really is a rich and satisfying dessert...although we were so full we still kept going spoon after spoon and just could not stop!

dang, girl!you've once again outdone yourself. this sounds incredible! I usually find panna cottas sort of too sweet, but with the dark chocolate to balance it out with its natural bitterness, this would be perfect!
